Island Lime Shrimp and veggie quesadillas

INGREDIENTS

  • 1 package of Margaritaville Island Lime Shrimp
  • 1 red & green bell pepper, diced
  • 1 medium onion diced
  • 1 tablespoon of chopped cilantro
  • 1 tablespoon of avocado oil
  • 1 tablespoon of butter
  • ½ cup of shredded cheese
  • 6 medium flour tortillas

DIRECTIONS

  1. In a large skillet, over medium-high heat, add oil and veggies. Cook for 2-3 minutes
  2. Add in the Margaritaville Island Lime Shrimp and reduce heat to simmer
  3. Stir occasionally until almost all liquid is evaporated
  4. Heat a griddle to 375F. 
  5. Melt one tablespoon of butter and add tortillas
  6. Fill one-half of each with shrimp and veggie mixture
  7. Sprinkle with cheese and fold over
  8. Flip after 2-3 minutes until golden brown
  9. Plate, and then cut them in half
  10. Serve with chopped cilantro and sour cream
