Island Lime Shrimp and veggie quesadillas
INGREDIENTS
- 1 package of Margaritaville Island Lime Shrimp
- 1 red & green bell pepper, diced
- 1 medium onion diced
- 1 tablespoon of chopped cilantro
- 1 tablespoon of avocado oil
- 1 tablespoon of butter
- ½ cup of shredded cheese
- 6 medium flour tortillas
DIRECTIONS
- In a large skillet, over medium-high heat, add oil and veggies. Cook for 2-3 minutes
- Add in the Margaritaville Island Lime Shrimp and reduce heat to simmer
- Stir occasionally until almost all liquid is evaporated
- Heat a griddle to 375F.
- Melt one tablespoon of butter and add tortillas
- Fill one-half of each with shrimp and veggie mixture
- Sprinkle with cheese and fold over
- Flip after 2-3 minutes until golden brown
- Plate, and then cut them in half
- Serve with chopped cilantro and sour cream
