Chili Citrus Shrimp Puff Pastry Cups
INGREDIENTS
- 2 packages Margaritaville Foods Key West Chili Citrus Shrimp
- 2 sheets frozen puff pastry
- 2 tablespoons butter, melted
- 2 tablespoons fresh cilantro, chopped
- ½ teaspoon garlic powder
- 1 8 ounce block feta cheese
- ¼ cup olive oil
- ½ cup fresh cilantro
- 2 tablespoons green onions
- Juice of 1 lime
- 1 garlic clove
- ½ cup sour cream, or Greek yogurt
- ½ teaspoon salt
- Green cabbage, thinly sliced
DIRECTIONS
- Preheat oven to 400F. Allow frozen puff pastry sheets to partially thaw (enough to be able to mold the puff pastry into a muffin tin).
- In a small bowl, stir together the melted butter, garlic powder and 2 tablespoons fresh cilantro. Roll the puff pastry out slightly with a rolling pin. Brush the butter mixture over the puff pastry.Cut each puff pastry sheet into 6 roughly equal squares. Gently press each square into the well of a 12-count, lightly greased muffin tin. Add feta cheese on top of the puff pastry.
- Bake in preheated oven for 12-15 minutes, or until golden brown in color.
- Meanwhile, add frozen Margaritaville Foods Key West Chili Citrus Shrimp to a large skillet (no need to oil skillet), over medium heat. Allow shrimp to cook, stirring occasionally for 8 minutes.
- Make the Cilantro Lime Sauce. In a blender add all ingredients for the Cilantro Lime Sauce. Blend until smooth and creamy.
- Add shrimp, sauce and cabbage to puff pastry cups. Enjoy!
