Grilled Hawaiian Chicken Sliders

INGREDIENTS

  • 1 lb. boneless skinless chicken thighs
  • Chili Lime Seasoning
  • Margaritaville Foods Pineapple Chili Lime Marinade
  • 10-12 Pineapple rings, fresh or canned (drained and patted dry)
  • 6 slices Pepper Jack cheese
  • 1 tomato, sliced
  • 1 medium bell pepper
  • 1 small red onion
  • Brioche buns
For sauce:
  • 1/2 cup mayonnaise
  • 1 tsp chili lime seasoning
  • 2 tsp Margaritaville Foods Pineapple Chili Lime Marinade
  • 1 tsp Dijon mustard
  • 1-2 tsp honey, or to taste

DIRECTIONS

  1. Liberally season chicken thighs with chili lime seasoning. Then pour 1/4-1/3 cup pineapple chili lime marinade over chicken and toss until all of the chicken thighs are coated evenly. Set aside.
  2. Slice red onion, bell pepper and pineapple (unless using canned) into 1/4 inch rings. Season with olive oil, salt and pepper then grill until both sides are charred (3-5 minutes).
  3. Grill chicken thighs until middle is no longer pink and juices run clear (10-12 minutes).
  4. Mix together mayonnaise,chili lime seasoning, pineapple chili lime marinade, Dijon mustard and honey for sauce.
  5. Assemble sliders with grilled chicken, bell pepper, red onion and pineapple. 
  6. Top with sliced tomatoes,cheese, any other toppings, and a healthy drizzle of sauce. 
  7. Enjoy!
