Grilled Hawaiian Chicken Sliders
INGREDIENTS
- 1 lb. boneless skinless chicken thighs
- Chili Lime Seasoning
- Margaritaville Foods Pineapple Chili Lime Marinade
- 10-12 Pineapple rings, fresh or canned (drained and patted dry)
- 6 slices Pepper Jack cheese
- 1 tomato, sliced
- 1 medium bell pepper
- 1 small red onion
- Brioche buns
- 1/2 cup mayonnaise
- 1 tsp chili lime seasoning
- 2 tsp Margaritaville Foods Pineapple Chili Lime Marinade
- 1 tsp Dijon mustard
- 1-2 tsp honey, or to taste
DIRECTIONS
- Liberally season chicken thighs with chili lime seasoning. Then pour 1/4-1/3 cup pineapple chili lime marinade over chicken and toss until all of the chicken thighs are coated evenly. Set aside.
- Slice red onion, bell pepper and pineapple (unless using canned) into 1/4 inch rings. Season with olive oil, salt and pepper then grill until both sides are charred (3-5 minutes).
- Grill chicken thighs until middle is no longer pink and juices run clear (10-12 minutes).
- Mix together mayonnaise,chili lime seasoning, pineapple chili lime marinade, Dijon mustard and honey for sauce.
- Assemble sliders with grilled chicken, bell pepper, red onion and pineapple.
- Top with sliced tomatoes,cheese, any other toppings, and a healthy drizzle of sauce.
