Chicken street tacos with pineapple salsa
INGREDIENTS
- 1 pound chicken breast
- Avocado oil
- Margaritaville Foods Calypso Rub
- Margaritaville Foods Pineapple Chili Lime Marinade
- 1 cup of diced pineapple
- 1/2 cup of diced tomatoes
- 1/2 cup of diced white onions
- 1/3 cup of chopped cilantro
- Juice of 1 lime
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- Tortillas
DIRECTIONS
- Rub avocado oil on chicken breasts and season with Margaritaville Foods Calypso Rub. Let sit for 15 minutes.
- Add the chicken to the grill over medium heat and while they’re grilling baste with Margaritaville Foods Pineapple Chili Lime Marinade.
- Keep basting the chicken every couple of minutes until the chicken has reached an internal temperature of 165°.
- Let the chicken rest for a couple of minutes and dice into small pieces. Cover with more Pineapple Chili Lime Marinade. Set aside & make your pineapple salsa.
- To make the pineapple salsa, add 1 cup of diced pineapple, 1/2 cup of diced tomatoes, 1/2 cup of diced white onions, 1/3 cup of chopped cilantro, 1 lime (squeezed), 1 tsp of salt, pepper, garlic powder & onion powder to a bowl. Mix well.
- Lay your street taco tortillas down & add in the diced chicken & top with the pineapple salsa.
