Margaritaville Sunset Shrimp Roll
INGREDIENTS
- 8 oz Margaritaville Sunset Shrimp Scampi
- 1 large celery stalk, peeled, finely chopped
- 3 scallions, thinly sliced
- ¼ cup mayonnaise
- 1 T chopped fresh dill
- 1 T fresh lemon juice
- 1 tsp red wine vinegar
- ¼ tsp paprika
- Freshly ground black pepper
- 4 hot dog buns, preferably potato, split
- 2 T unsalted butter, room temperature
DIRECTIONS
- Cook shrimp as directed on packaging.
- Once cooked, chop into small pieces.
- Combine celery, scallions, mayonnaise, dill, lemon juice, vinegar, and paprika; season with salt and pepper. Fold in shrimp.
- Meanwhile, toast hot dog buns.
- Spread butter on each toasted bun and fill with shrimp salad.
